Inspector's notes

Ham and sliced tomatoes found in reach-in cooler below make station with internal temperatures of 44-48*F for tomatoes and 49-50*F for the ham. The ambient temperature of the cooler ranged between 29-40*F. Other food items in the cooler were found with internal temperatures of 41*F or below. PIC stated the tomatoes had been placed in the cooler around 10;30 AM and moved them to another cooler for cooling and continued cold holding. The ham had been in the cooler and had not had its temperature checked prior to 4:00 AM today. PIC discarded the ham. The cooler will continue to be monitored to ensure it is able to maintain TCS food items below 41*F or below. Pleaase ensure cold held TCS food items are maintained at 41*F or below. Corrective Action: Corrected at time of inspection.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Sliced tomatoes and shredded lettuce in food prep cooler with internal temperatures of 52-53*F. Ambient temperature of cooler was 55-59*F. Temperatures verified with inspector's and PIC's calibrated probe thermometers. PIC stated the items were prepped and placed in the cooler around 6-7 AM this morning and chose to discard the food items. The cooler will not be used for cold holding TCS food items until it is repaired/replaced and able to maintain an ambient temperature of 41*F or below. Alternate coolers are available nearby to continue normal operations. Please ensure cold held TCS food items are maintained at 41*F or below.
