-- In warming drawer, observed homestyle chicken patty and regular crispy chicken patties with internal temperatures ranging between 114°F-127°F. The PIC stated the items were just prepared 1 hour prior to the inspection. All TCS foods improperly hot held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Repeat Violation PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Sliced tomatoes, lettuce, egg rolls, cold brew coffee, cooked chicken, and other TCS food items found in walk-in cooler with internal temperatures between 46-50*F. Establishment's ambient thermometer and inspector's min/max thermometer both showed 49*F. PIC stated the walk-in had not been checked today to verify its temperature. PIC voluntarily closed the store and discarded the TCS food items in the walk-in (see embargo form). Towards end of inspection, repair technician arrived and found that the walk-in was stuck in defrost mode and fixed it by the end of the inspection. Walk-in was providing an ambient temperature of 33*F. Please ensure cold held TCS food items are maintained at 41*F or below. Repeat Violations: 2nd,Correct By: Corrected At Time Of Inspection
