Observed multiple containers of cooked Birria and Birria consommé located on the bottom shelf of the walk-in refrigerator with date-marks indicating the food had been cooked on 10/26 and 11/11. Confirmed dates with the manager and observed organic matter beginning to develop on the cooked Birria. The establishment shall only hold cooked Time/Temperature Control for Safety (TCS) or Ready To Eat (RTE) foods for a total of 7 days, excluding any time frozen. The manager voluntarily discarded the food items at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed multiple steel pans containing cooked carne asada and pastor stacked on top of one another located on a shelf in the walk-in refrigerator registering internal temperatures between 52°-53°F. Per person in charge (PIC), the cooked Time/Temperature Control for Safety (TCS) food items were cooked and placed in the walk-in refrigerator the afternoon prior to the time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. The PIC voluntarily discarded the food items at the time of inspection. Discussed alternative strategies for cooling foods including utilizing the top shelf in the walk-in cooler, removing the lids of containers that are actively cooling, and utilizing the probing thermometer in the kitchen to monitor the cooling process. Observed bottles of red and green salsas containing cooked peppers in glass door reach-in refrigerator in front of house (FOH) with internal temperature of 52-54 degrees Fahrenheit. Please ensure time-and-temperature control for safety (TCS) foods are kept at 41F or colder. Ambient temperature of refrigerator was measured at 45F with min-max thermometer. Glass door refrigerators are not recommended for storage of TCS foods. Unit is not critical refrigeration equipment and establishment has sufficient refrigeration to hold remaining TCS foods cold. Per PIC, salsas were placed into unit for lunch service less than 4 hours prior to inspection. PIC moved salsas to lower compartments of prep-style refrigerators during the inspection to correct.
