Dishwasher in kitchen measured <50ppm chlorine sanitizer when tested. Container of sanitizer was observed to be empty. Person in charge replaced sanitizer. Dishwasher was run again and chlorine sanitizer measured at 50ppm. Chlorine sanitizer shall have a concentration of 50-100ppm. Corrective Action: Corrected at time of inspection.

Observed cooked chicken (50-55°F), raw beef (50°F), and cooked egg roll (88°F) in a small prep table on the cook line. The prep table measured 53.9°F with the min/max. Alerted the manager who stated they had been having issues with the prep table and had fixed last week. The manager called out their third-party servicer to come out and fix it today. Staff stated all foods had been in the unit for less than 1 hour> All food was moved to alternative working refrigerators. Corrective Action: Corrected at time of inspection.

Per the Person in Charge TCS food items will be not be stored in the prep unit until it is in good repair. The reach in the cold holding unit is not to be used to hold TCS foods until it can safely maintain TCS foods below 41°F. Corrective Action: Corrected at time of inspection.

Core-3-307.11, C: Miscellaneous Sources of Contamination. Observed tub of pot stickers being cooled in sink where large amount of raw chicken was also being prepped.
