New permit inspection walk through. Meeting with ownership about food service. The menu items planned for now are pizza, nacho's, ice cream, boba and smoothies.Discussed were the following requirements:1). If you keep the counter, then install a sneeze guard along the counter to shield and food, clean dishes etc. Make sure the total height is 60 inches minimum.2). If you have to wash fruits, pizza toppings etc., then install a food prep sink. Waste the sink to the floor sink.3). Ice machine, if installed will need to waste to the floor sink as well. Maintain gravity flow and air gap.4). All floor / wall junctures will need to be coved. Same for cabinet bases.5). Provide sufficient lighting, 50 foot candles are required for open food handling.6), The water heater will need to be upgraded. Standard for an eating and drinking is 50 gallon but the you may be able to move the water heater from the other store.7). Ceiling in the food service area is required to be washable.8) If you place the oven against the wall then make sure that the wall finish is heat resistant and does not melt and can be easily cleanable.9). Restroom doors will need to be self closing.10). One of the restrooms does not have hot water. Please repair.11). Provide trash cans with lids in the restrooms.12).
