Observed unsealed absorbent wood around the drink cup rinser and ice well to be rotting away and holding black organic matter. Some surface area is rough with exposed black organic matter and some is covered with plexiglass and caulking with the black organic matter underneath. Discussed with person in charge (PIC) all equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. Corrective Action: Correct prior to next routine inspection.

Inspector's notes
Observed the drain line from the drink cup rinser to be drooping and ice well to drain into a hub drain and missing an airgap. Also observed is a missing air gap from the ice machine floor sink. Discussed with PIC Provide rigid drain line (flexible tubing may be sleeved to rigid pipe) for espresso machine and route to drain at floor sink. Ensure adequate slope is maintained in drain line to allow wastewater to properly drain and provide a minimum 1 inch air gap for drain line above flood rim of floor sink prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
