Observed no hot water under pressure at the handwashing sink in the bathroom at time of inspection. Observed hot water handle broken off of the handwashing sink at time of inspection. Handwash sinks must be supplied with cold and hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Repair handwashing sink prior to next routine inspection. Corrective Action: Correct prior to re-inspection on 6/30.

Observed chlorine sanitizer in 3-compartment sink over 200 ppm at time of inspection. Sanitizer was diluted by PIC to approved levels at time of inspection. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Corrective Action: Corrected at time of inspection.

Observed deli turkey, ham, bacon and muster cheese, hatch green chili, lettuce diced tomato and deli turkey placed in unit a short time prior. cold holding at internal temperature of 51-53 deg F in a reach in unit that was holding >41 Deg F. Manager informed the deli turkey, ham, bacon cheese and green chili had been cold holding since the night prior and discarded. Manager placed the lettuce and the deli turkey purchased earlier in day in alternate large cold unit. Corrective Action: Corrected at time of inspection.
