Inspector's notes
Observed white and black particles being collected under fans in walk-in cooler and walk-in freezer. The particles are being collected in separate metal trays on shelf just below fans. Observed open food present in both coolers. Discussed with person in charge importance of capturing all loose contaminants that may blow past trays, covering all food, or getting fans serviced to eliminate the circulation of contaminants. Corrective Action: Correct prior to next routine inspection.
