Advised Person in Charge (PIC) that the PIC shall be the Certified Food Protection Manager, and per paragraph 2-101.11, and be present during all hours of operation. PIC stated they will obtain a Food Protection Manager certification as soon as possible. 2ND CONSECUTIVE VIOLATION.Kitchen still has reverse osmosis (RO) system underneath 3-compartment sink, however it is secured. PIC stated they are not using the RO system until the owners determine if they want to install the proper backflow prevention device.Recommend keeping ice to calibrate/verify accuracy of food probe thermometer.The Environmental Services Department will begin emailing permit card(s) and permit invoice(s) to permittees in the coming months.
