Observed cooked salsa from yesterday and the day before with an internal temperature of 47F. Walk in fridge found to have an internal temperature of 48F on first reading then 42F on second reading. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed cooked salsa from yesterday and the day before with an internal temperature of 47F. Walk in fridge found to have an internal temperature of 48F on first reading then 42F on second reading. Other TCS foods cooked two hours ago have an internal temperature of 48F-55F. Non TCS foods found to have an internal temperature of 47F. Discussed with person in charge to put items above temperature range in freezer to finish cooling down. Person in charge also states that technician will come out to look at unit in 2-3 hours.
