Inspector's notes
Observed prep table on the cookline holding TCS foods between 44*F-50*F at the time of inspection. Observed pico 46*F, cut lettuce 44*F, cheese 50*F, cooked jalapenos 46*F in the cold table. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per PIC, TCS food items had been moved into the cold table 3 hours prior to the time of inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed a broken down ice machine located back of house not in use but had a dead roach inside. Any out-of-service, water-contact equipment provides a significant pest attractant, as residual moisture and secluded interior spaces create an ideal environment for pests like cockroaches to nest and breed. Instructed PIC to remove the machine from the premises before the next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed that the prep station had a temperature of 50F, measured with a calibrated min/max thermometer. Cold holding units must be capable of keeping TSC foods, including cut lettuce, cut tomatoes and whole shell eggs. The PIC stated that the unit had just stopped working and the foods had only been in the unit for 30 minutes, TCS foods were moved to a functioning cold holding unit next to the prep station. The establishment has sufficient functioning cold holding units to operate. Proof of repair of unit may be submitted by email prior to reinspection within 10 days.
