Observed ready to serve pork egg rolls on hot dog rollers with an internal temperature of 125-130*F. PIC acknowledged the re-heat temperature setting was too low and adjusted it at time of inspection. PIC, moved items back to to re-heat to 165*f. Please monitor foods closely to ensure proper hot holding temperatures are maintained. Correct By: Corrected At Time Of Inspection

Observed container of scrambled eggs, bag of romaine lettuce being stored out of the prep table with an internal temperature of 46-53*F. Current prep table is down for service to be repaired and is not being used to store TCS foods. Discussed proper storage of foods in working refrigerated units to prevent temperature rising in between rush hour. Also observed pizza sauce in walk-in cooler with an internal temperature of 46*F. According to PIC, sauce had previously been left out to make a pizza, which allowed it to increase in temperature. Until prep table is repaired, please ensure cold TCS foods are not left out unmonitored. Lettuce and scrambled eggs were discarded at time of inspection. Correct By: Corrected At Time Of Inspection
