Observed cook use bare hands to assemble and disassemble at least one hamburger, touching the bun, cooked patty, and sliced tomato. Inspector notified PIC. PIC discarded the contaminated hamburger and instructed employee to wash hands and don gloves prior to touching food with hands. Discussed the importance of preventing bare hand contact with ready-to-eat (RTE) foods with the person-in-charge (PIC). Bare hand contact is not approved with ready-to-eat (RTE) food items. Corrective Action: Corrected at time of inspection.

Observed thawed and open containers of foot-long hot dogs, regular hot dogs, and corn dogs in the cook-line reach-in, without date marks. According to PIC, the packages were opened 1-3 days prior to the inspection. PIC instructed employee to place a label on the TCS foods with the correct start date. Date marking requirements apply to containers of processed food that have been opened and to food prepared by a food establishment, in both cases if held for more than 24 hours. Corrective Action: Corrected at time of inspection.

Observed pieces of dried onion on the blades of the onion dicer, which was being stored as clean. PIC placed the dicer into the 3-compartment sink to be rewashed. Discussed inspecting the food-contact surfaces of equipment to ensure that soil and food debris is removed prior to being stored as clean. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.
