Observed shrimp spring rolls cold holding on counter at internal temperature of 69 deg F. Manager informed this product is normally under time as a control however was unable to provide time the food item was placed out of control and discarded. Observed raw shrimp, diced chicken, cut cabbage, cooked beef, pooled eggs cold holding at internal temperature of 52-53 deg F in a large preparation table that was holding >41 deg F. Manager informed the diced chicken, pooled eggs, and shredded cabbage had been in unit since the night prior and discarded and placed all other food items in walk in unit. Observed cut cabbage, tofu, cooked chicken cold holding at internal temperature of 47-48 deg F in top portion of reach in unit. Manager informed the establishment uses time as a public health control and as per their procedure they place time sticker in top portion of unit. Employee informed the food items in this unit were recently changed and did not place the new time stamp in unit. The employee was able to recall the time the food items were placed out of temperature control and placed time stamp in unit as per their procedure.
