Observed employee touch his face, hat, and hair with gloved hands then proceed to handle RTE (ready-to-eat) to pastries for a customer order without washing his hands or donning new gloves. Employee properly washed hands at handwash sink at time of inspection. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.

Inspector's notes

At time of inspection, observed dish machine with a sanitizer concentration of 0ppm for chlorine. The sanitizer bucket for the machine was empty, and PIC changed out the bucket. After priming the dish machine, with the new bucket attached, dish machine had a proper concentration range for chlorine. Instructed PIC re-wash any dishes that were ran through the dish machine on the day of the inspection. Chlorine must have a concentration between 50-100 ppm for sanitizing food contact surfaces. Corrective Action: Corrected at time of inspection.

Observed cut lettuce, deli ham, deli turkey, tuna (with mayo), ranch, sauces (garlic aloi, chipotle ranch), hummus, cut herbs, sliced cheese (cheddar, white cheddar, mozzarella, provolone), cooked chicken, cooked beef, and cut tomatoes stored in the prep table when you first enter the line with an internal temperature range of 45F-50F. Per PIC, the food items had been in the prep table since this morning, over 4 hours. All TCS foods improperly cold held were discarded by PIC at time of inspection. Also observed cut chicken in another prep table with an internal temperature of 49F. Per PIC, the cooked chicken had been in the prep table for over 4 hours, and was voluntarily discarded by the PIC.
