Observed some buildup on the racks on the inside of the chicken wing refrigerator in the kitchen area. Discussed with person in charge to clean the refrigerator on a more frequent basis to prevent the accumulation of soils on the racks. Person in charge will take the racks out and clean them. Also observed some soils on the hand soap dispenser. Person in charge will clean the soap dispenser. Discussed general cleanliness of the establishment. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed some fryer baskets with broken/missing wires on them. Discussed with person in charge to replace fryer baskets once wires begin to break/separate from the main fryer basket body. Person in charge had other fryer baskets to utilize while they replace the broken baskets. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Corrected at time of inspection.

Observed a heavy accumulation of grease collecting on the hood ventilation system above the fryers and pizza oven. Observed food debris on the walls in the dough prep area. Observed some dust collecting on the ceiling tiles above the pizza prep tables. Discussed with person in charge to clean on a more frequent basis to minimize the buildup of food, dust/dirt and other soils on the floors, walls and ceilings. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection. 6-201.11 - Core: Floors, Walls and Ceilings-Cleanability Addl Notes: Observed broken/missing floor tile inside of the walk-in cooler, which interferes with cleanability. Discussed with person in charge to replace the missing/broken floor tile so that the floor is smooth, durable and easily cleanable. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection.
