Observed cooked rice, beans, chicken soup, chiles Rellenos and chicharrónes in individual metal trays on rack all measuring at an internal temperature of 46-51°F date marked from 1-2 days ago. Discussed with PIC that all Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling and discussed cooling processes. All TCS foods improperly cooled were discarded by PIC at time of inspection. PRIORITY VIOLATION-3-501.14 - Priority: Cooling. Inspector's notes
Observed large, covered, deep pan (greater than 4 inches) of cooked potatoes that were cooling down in the cooler. According to the person in charge, the potatoes had begun cooling approximately 1 hour prior to the start of the inspection. The internal temperature of the cooked potatoes as measured using a probe thermometer had an internal temperature of 67°F. Person in charge transferred the cooked potatoes to a 2-inch pan that was uncovered and placed up high in the walk-in to finish cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

Observed large accumulation of grease and food debris around the stoves area in the corner of the kitchen. Discussed with person in charge to clean on a more frequent basis. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. Observed a chicken, potato and corn cob soup with an internal temperature as measured using a probe thermometer of 121°F on the hot holding case at the deli front. Per the person in charge, the soup had been sitting in the hot well for just under one hour. The person in charge had the soup rapidly reheated to 165°F and then adjusted the water level on the hot holding unit to ensure that hot held food is held at a minimum of 135°F. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification of hot holding temperatures, which resulted in the violation. Please ensure that food temperatures are regularly monitored and that foods that are hot holding are holding at a minimum of 135°F or higher in temperature.
