Inspector's notes

TCS food items in prep cooler, such as sliced tomatoes, raw shelled eggs, sour cream, meats, and cheeses, found with internal temperature of 51*F. The prep cooler had an ambient temperature of 54*F. PIC stated the cooler was last known to be at 41*F or below around 7:00 AM today and moved most of the items to the walk-in for cooling. Some items were placed in an ice bath for cooling and continued cold holding in the top portion of the cooler. Repair technician was contacted for repairs to the prep cooler. The cooler will not be used for cold holding without the aid of the ice bathes until it is repaired/replaced and able to maintain a temperature of 41*F or below. Please ensure cold held TCS food items are maintained at 41*F or below. Corrective Action: Corrected at time of inspection.

The cheese was 51*F after 40 minutes of being in the walk-in. PIC stated the cheese was placed in the walk-in about 30 minutes before the first temperature check by the inspector. The cheese was large pan about 6 inches deep or more and piled over the rim of the container. Machaca also found in the walk-in with similar temperatures and time frames going from 53*F-51*F in 40 minutes and being in a 4 inch deep pan. Discussed cooling methods with PIC. PIC will move the food items into smaller pans for cooling and continue to monitor them. If they do not reach a temperature of 41*F or below prior to a period of 4 hours since they were initially placed in the walk-in they will be discarded.
