The following thawing methods are approved: • Under refrigeration that maintains the food temperature at 41°F or less; or completely submerged under running water (water must be 70°F or cooler and must have sufficient velocity to float off loose particles). Requested at the time of inspection, the PIC place items in reach-in refrigerator. Corrective Action: Corrected at time of inspection.
