Observed multiple cutting boards heavily scratched and stained. Discussed replacing or resurfacing cutting boards to prevent potential contamination. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. All equipment must be maintained in good repair at all times. Inspector's notes
Observed juices and milk in front grab-and-go refrigerated case with internal temperatures between 47-57°F at the time of inspection. The Person in Charge (PIC) stated the temperature had not been verified to be less than 40 degrees within the last 4 hours, so all TCS foods improperly cold held were discarded by PIC at time of inspection (see embargo form). Discussed temperature monitoring procedures and frequency. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
