Observed raw fish in Reduced Oxygen Packaging (ROP) in the refrigerator for thawing. PIC stated the fish is stored here regularly, not just for immediate use. PIC stated it was recently thawed, so fish was immediately removed from ROP packaging. Fish must be removed from ROP prior to thawing or immediately upon completion of thawing. Discussed thawing less amounts fish at a time or removing fish from ROP packaging before thawing. Corrective Action: Corrected at time of inspection.

Core-3-501.13, C: Thawing --Observed 15 packages of raw chicken placed on the rack above the prep sink at the time of inspection. PIC stated the chicken was defrosting and was going to be cut soon. Chicken was moved to the walk-in cooler. Discussed proper thawing procedures with PIC along with public health risks. Thawing can be done by the following approved methods: under refrigeration that maintains the food temperature of 41°F or less, completely submerged under running water less than 70°F, part of a cooking process, or thawed in a microwave oven and immediately transferred to conventional cooking equipment with no interruption in the process.
