Inspector's notes

Observed shredded cheese, and butter (mixed with herbs and spices) with an internal temperature of 50F, on the server line. Per PIC, the cheese and butter had been on the line for less than 2 hours prior to the inspection. PIC had staff add more ice to the line for rapid cooling. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed high temperature, continuous mechanical dishwasher in the kitchen reaching 125 degrees Fahrenheit per max/min thermometer. PIC called for dishwasher to be serviced and employees started using under counter single rack dishwasher that was raeching 165 degrees Fahrenheit. For hot water sanitization, rinse temperature shall be at least 160 degrees Fahrenheit at the point of the dishes. Corrective Action: Corrected at time of inspection.

For hot water sanitization temperature at the point of the dishes shall be at least 160 degrees Fahrenheit. Corrective Action: Corrected at time of inspection.
