Inspector's notes

Observed two large trays of cooked rice cooling in the walk in refrigerator with internal temperatures between 70-100°F stacked and tightly covered. All TCS foods cooling were uncovered to allow for rapid cooling. One tray was moved to the bast chiller at time of inspection.
