Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. After discussion with the person in charge it was determined the cheese and egg whites were within safe time parameters and were returned to refrigeration. The PIC voluntarily discarded the cream brûlée mix and condensed milk. According to manufacturer label refrigerate condensed milk after opening. Corrective Action: Corrected at time of inspection.

Observed 3 - 22 quart containers of carrot ginger soup and 3 - 22 quart containers of cooked black beans in the walk-in cooler. The person in charge stated that both products were made the night before. With inspector probe thermometer the product measured 65*F and 66* F respectively. The person in charge voluntarily discarded product at time of inspection. Discussed with the person in charge that acceptable methods of cooling product include: placing food in shallow pans, separating the food into smaller or thinner portions , using rapid cooling equipment (i.e. a blast chiller), stirring the food in a container placed in an ice water bath, using containers that facilitate heat transfer, and adding ice as an ingredient. Arrived onsite, discussed the potential remodel and observed the cold storage with manager Caio B.The items stored in the cold storage are bananas, beets, potatoes, onions, dragon fruit, pineapple, carrots, mangoes, and various canned foods, jarred foods, flour, etc. All of the items located in the cold storage are not required to be temperature controlled.The establishment added the walk-in compressors to the storage area to combat the small fly issue they were having, which has been successful.Due to these findings the remodel application is not necessary. The manager is aware if the cold storage is to be used as a traditional walk-in cooler for time/temperature control for safety foods, a remodel permit application would be required.Report emailed, and confirmed, to the manager.No County legal action will result from this inspection.
