Observed no paper towels at the handwashing in the back of house and none at the handwashing sink near the coffee station at time of inspection. Person in charge (PIC) provided hand drying provision for handwash sink at time of inspection. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PRIORITY VIOLATION-5-402.13, P: Conveying Sewage - Observed floor drain for the 3-compartment sink (basin on the left side) and for the oven that has a water line connected to it clogged, and not draining in the back of house at time of inspection. Observed establishment actively utilizing the oven to make food at time of inspection. Observed the left basin of the 3-compartment sink blocked off at time of inspection. Person in charge (PIC) demonstrated that they were able to wash, rinse, and sanitize dishes in 2 of the 3 compartments of the sink at time of inspection. Establishment will discontinue use of oven until the floor drain is repaired and operational. Repair and clean area to restore use of required 3-compartment sink & oven prior to reinspection tomorrow, 1/26. :

Observed walk-in cooler with an ambient temperature of 59.6*F at time of inspection. Per person in charge (PIC), bagged milk, bacon, omelets, butter, and sandwiches were all placed in the walk-in yesterday and were voluntarily discarded at time of inspection. Per PIC, bottled milk was delivered this morning and was moved to beer walk-in at time of inspection. Discussed proper cold holding with the PIC. Establishment has another walk-in cooler, reach-ins, and freezers that are all operational. Cold holding equipment must have the capacity to maintain all TCS foods at 41*F or below.
