Inspector's notes

Observed multiple TCS food items (chicken ceasar wrap, turkey breast wrap, cold cut sandwiches with cheese, hard boiled eggs, snack trays with salami and cheese) measured 45-61'F at time of inspection. Food items in question observed stored in left side cooler and center cooler of 3-sided sandwich cooler by entrance. PIC stated food items have been stored for longer than 4 hours. All TCS foods improperly cold held were voluntarily discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed ambient temperatures of left side cooler (46.0'F) and center cooler (48.9'F) of 3-sided sandwich cooler by entrance; in disrepair and not functioning at capacity to maintain coldholding temperatures of 41'F and below. Units were emptied of TCS food items at time of inspection. Coldholding equipment shall be operating at full capacity to support and maintaing coldholding temperatures of 41'F and below. Discussed placement of unit close to entrance is not beneficial to maintaining proper temperatures. Informed PIC to ensure stock storage is not blocking milk shelfing inside walk-in unit; to ensure milk items are getting proper airflow. Fix broken units prior to re-inspection on 08/18/25. Corrective Action: Correct prior to re-inspection.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding.---In the sandwich cooler, observed the middle portion having prepackaged sandwiches (turkey, ham, roast beef, cheese, lettuce), prepackaged fruit and cheese plates, prepackaged cheese and meat plates, and prepackaged chicken Cesar salads having internal temperatures of 49-53*F. Person in charge voluntarily disposed of these foods at the time of inspection since these foods had been in the unit for more than 4 hours. Discussed how all time/temperature control for safety (TCS) foods that are cold held must keep an internal temperature of 41*F or below to prevent bacterial growth. Person in charge submitted a work order for it to be fixed. Discussed the importance of having all cold holding units being able to keep an ambient temperature of 41*F or below to prevent bacterial growth of TCS foods. Please do not store any TCS foods in unit until it is working properly. Reinspection will be conducted within 10 days. Correct By: Correct Prior To Reinspection
