Inspector's notes

Observed Time/temperature Control for Safety (TCS) foods (snack packages including cheeses) in refrigerated unit near front of store on an end of an aisle to have internal temperatures measured to be 56-59*F. Per Person In Charge (PIC) some of these items were stocked about five hours prior, some have been in unit overnight, and this unit does not have a temperature monitoring sensor so temperature was not checked this morning. PIC voluntarily removed items to discard. See embargo.

Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Predefined Comment: All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
