Observed walk-in cooler measuring with an ambient temperature of 51 degrees F. Various TCS foods in the cooler measured with internal temperatures ranging between 46-49 degrees F. The food had not been out of temperature for more than 6 hours. The adjoining freezer door was opened at time of inspection to rapidly cool food down. Discussed cold holding. Adequate alternative refrigeration is not available- see violation #33 Corrective Action: Corrected at time of inspection.

Observed walk-in cooler measuring with an ambient temperature of 51 degrees F. Various TCS foods in the cooler measured with internal temperatures ranging between 46-49 degrees F. The food had not been out of temperature for more than 6 hours. The adjoining freezer door was opened at time of inspection to rapidly cool food down. Cold holding equipment must be able to maintain temperature at or below 41 degrees F without additional accommodations. Repair is scheduled for today. A 24 hour re-inspection is required. Corrective Action: Correct within 24 hours.
