Inspector's notes

Sandwich cooler near entrance had the following TCS items measuring an internal temperature of 52-53'F: burritos, chicken sandwiches, deli meat sandwiches, lunchables/lunchly kits, wraps, breakfast sandwiches, breakfast burritos, rib sandwiches, philly sandwiches, pickle bites, hard boiled eggs, and individual cheese snacks. Per person in charge internal temperature had not been verified within past 4 hours. Items were embargoed. Ambient air temperature of cooler measured 49.2'F with min/max thermometer. Establishment has other adequate refrigeration to store TCS foods. Person in charge placed a work order for cooler. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
