Observed the new, unused styrofoam plates used to package and sell raw meats to have an accumulation of red liquid from raw meat, both dried and fresh, on the surface of the trays. Also observed there was an accumulation of red liquid on the metal cart used to store the containers. Equipment food contact surfaces and utensils shall be clean to sight and touch. Instructed employee to wash and sanitize the metal cart and discard the soiled trays. The PIC discarded the trays at the time of this inspection and will find another location for the trays. PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Observed the sanitizer basin of the 3 comp sink in the meat grinding room to have less than 200ppm of QAT sanitizer. The minimum concentration for QAT sanitizer is 200ppm. On further observation it was observed that sanitizer was not being properly dispense due to air in the dispensing line. The PIC was able to adjust the flow of the dispenser to dispense the correct concentration of sanitizer. Correct By: Corrected At Time Of Inspection
