Large, covered container of corned beef solution found in walk-in cooler at internal temperature of 135*F. The requirement for cooling cooked TCS food, is that the food must be cooled from 135°F to 41°F or less in 6 hrs provided that the food is cooled from 135°F to 70°F within the first 2 hours. Properly cool TCS foods.

Observed a broken gasket along the freezer door causing ice build up in walk-in refrigeration unit. Per PIC they had recently replaced the gasket for the walk-in door but had not replaced the freezer door yet. Educated PIC to remove ice build up before replacing gasket. Correct prior to next routine inspection.

Inspector's notes
Observed walk-in refrigeration unit with TCS food with internal temperatures ranging from 44*F to 51*F. Internal temperature was taken with internal probe thermometer. Ambient air temperature of unit was taken with min/max thermometer, found to be 47*F. Walk in was not providing adequate refrigeration of all TCS foods. TCS foods included: cut leafy greens, cooked chicken wings, cooked lamb shanks, cooked soups, cooked sauces, raw chicken, raw bacon, raw roasts, homemade deli salads, and dairy products. All TCS foods improperly cold held were discarded by PIC at time of inspection. Educated PIC that all TCS food need to be held under 41*F and regular temperature checks should be performed with internal probe thermometer. Corrected at time of inspection.
