Observed the fixed part of the ventilation system on the cookline to have either missing caulking or existing caulking that is dangling above the fryers. Discussed with person in charge (PIC) all fixed equipment shall be sealed with high temperature caulking to create a smooth and cleanable surface and to prevent grease build up and drippage. Observed employee placing raw burger patties on the grill, change gloves, and then start placing sliced tomatoes and pickles on the buns for the order without washing hands. Employee washed hands at time of inspection. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.
