Inspector's notes

In hot holding unit, cooked chicken with an internal temperature of 105*F-112*F. Per manager, chicken was prepared about 45 minutes. Manager moved cooked chicken to steamer to reheat to 165*F and to maintain hot. Maintain TCS (time/ temperature control for food safety) foods at a hot holding temperature of 135*F or higher at all times. Corrective Action: Corrected at time of inspection.
