Per employees, meat ends and brisket were out of temperature <2 hours. Meat ends were moved to walk in cooler to rapidly cool and brisket was moved to oven to reheat back to 165*F for hot holding. In the prep cooler near the hot water baths, observed TCS food holding above 41F including. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. It was determined that the power cord to the unit was damaged, sparking, and unsafe to plug in. Per PIC, the unit was working properly and verified earlier, and the foods were within safe time parameters. All TCS foods improperly cold held were relocated to alternative functioning refrigeration or placed in ice baths to rapidly cool to 41°F at time of inspection. Repair service immediately scheduled for the unit. Corrective Action: Corrected at time of inspection.
