Inspector's notes
On cook line, employee handled raw tuna with gloved hands, then continued handling ready to eat foods without a proper glove change and handwash. Instructed employee to remove gloves, wash hands, and don new gloves to continue with task. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands are tobe washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.

Shut off valves are not approved downstream from AVBs. Provide a dedicated water line for the outdoor misting system. The splitter and water line were disconnected at time of inspection. Inspector's notes
In prep cooler/44.9F, observed TCS food including cabbage, cheese, chicken, etc holding at 44-52F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per staff, a line check was conducted about an hour before and proper temperatures were observed. Staff iced TCS food in the open top and the manager adjusted the thermostat inside the cooler, and a slight temperature drop was observed during the inspection. Staff to continue to use ice, monitor the unit, and repair as needed. Corrective Action: Corrected at time of inspection.
