Observed employee take off gloves and washed hands less than 15 seconds then put new gloves on. Discussed with PIC that hand washing with soap for 20 seconds is required when placing new gloves. Observed cold brew in covered container holding 74 F, per PIC cold brew was made 1 hour prior. Discussed with PIC that cold brew is a TCS items so it must maintain a temperature of 41 F or below for safety and items cooling should be left uncovered for proper cooling. Per SOP cold brew should be made with cold water however batch at time of inspection was made with room temperature. Cold brew was cooled down with ice. Correct By: Corrected At Time Of Inspection
