Predefined Comment: Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks.

Corrective Action: Corrected at time of inspection. Blue cheese dressing and house made habanero sauce in home-style cooler at expo station at 57*F and 63*F internally. Manager stated it had been in unit more than four hours. Embargoed, manager discarded.

Inspector's notes
Observed that some of the ceiling tiles are not smooth and easily cleanable. Those will need to be changed so that the debris on the ceiling tiles can be cleaned regularly. Also observed that some of the floor tiles in the brewery are cracked and need to be replaced to maintain a smooth, easily cleanable surface. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed dishwasher putting away dishes that were sanitized with 0 ppm of chlorine. Discussed with PIC that chlorine should be dispensed at 50-100 ppm chlorine. Observed in prep cooler across from stove tops facility using ice baths to hold cut lettuce and cut tomatoes holding 46-51 F. Discussed with PIC that ice baths must be fully submerge around food container. Tomatoes and lettuce were moved to walk in to rapidly cool. Observed mini fridge next to serving window holding 52.7 F using min/max thermometer holding tcs sauces like ranch and garlic aioli sauce was 52 F when temperature was taken. Discussed with PIC that all TCS foods should be holding 41 F or below. Sauces were discarded. Correct By: Corrected At Time Of Inspection
