Inspector's notes

Observed TCS food items such as cut watermelon, diced tomatoes, and in-house made salsas with internal temperatures ranging between 54-56°F in walk-in cooler. Ambient air temperature in walk-in cooler measured 54°F. Per person in charge, items were moved from catering kitchen to satellite kitchen about 2 hours prior. PIC instructed staff to have food items placed on ice and moved to loft kitchen for rapid cooling. Corrective Action: Corrected at time of inspection.

Observed ambient air temperature of walk-in cooler measuring 54°F. Establishment will have unit serviced to ensure it is maintained in good repair. Also discussed keeping non-TCS items (canned/bottled beverages) in alternative cold holding unit to limit constant opening, and propping open, of door. All units intended for cold holding of TCS food items shall be maintained at 41°F or below. Corrective Action: Correct prior to next routine inspection.
