Observed in-use 3 compartment sink with quat sanitizer concentration at 150 ppm (measured by test strips). Per manufacturer label on bottle, quat concentration must be between 200 and 400 ppm. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Corrective Action: Correct prior to re-inspection.

The top of the backflow device in the mop sink has been broken off. The device may still work properly but there are sharp plastic edges around where the backflow cover would normally be. Discussed with PIC the need to have plumbing in a good state of repair and why the backflow device was important. Must repair all plumbing to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
