Observed raw chicken 45-47*F and raw beef 46-47*F in reach in cooler in the middle of the kitchen at the time of inspection. Per inspectors min/max thermometer, the unit had an internal temperature of 51.6*F and the unit displayed 55*F at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, TCS food items had been prepped less than 4 hours prior to the time of inspection and placed in the reach in cooler. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Observed a deep, covered pot with lentil soup 71-94*F cooling at the time of the inspection in the walk-in cooler. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Per employee, TCS soup is cooled in large pot then transferred to individual portion sizes the next day. Per employee, TCS soup was made less than two hours prior to the time of inspection. All TCS foods being cooled in deep containers were transferred to shallow containers 4" or less to allow for rapid cooling. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed in the cold-holding prep table in front of the grill cut tomatoes at 51°F, cut lettuce at 52°F and cooked eggplant at 50°F, all measured internally with a calibrated probe thermometer. The unit itself had a minimum temperature of 49°F as measured on a calibrated min-max thermometer. Per PIC, items had been in the unit for more than 4 hours. Discussed not overfilling containers in the prep table and using ice baths to ensure TCS items are kept at 41°F or less to prevent the growth of pathogenic bacteria. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
