Observed cooked eel in the reach-in cooler next to hand sink on the cook line with an internal temperature of 51*F when measured with a probe thermometer. According to owner, eel was cooked a short time ago for lunch. Eel was moved to walk-in to cool properly. Observed several TCS items in the same cooler with internal temperatures of 44-45*F when measured with a probe thermometer. According to owner these items had been placed in the cooler at 11AM. Cooler was not holding proper temperature. TCS foods must maintain internal temperatures of 41*F or below. All TCS foods were moved to the walk-in at time of inspection. Corrective Action: Corrected at time of inspection.

Observed in-use dishwasher dispensing 0 ppm of chlorine in final rinse cycle due to a low sanitizer container. All chemical dishwashers must dispense 50-100 ppm of chlorine to ensure proper sanitization of food contact surfaces. Sanitizer container was changed at time of inspection and a final rinse of 100 ppm was achieved. Discussed testing dishwasher with a test strip daily to ensure sanitizer is dispensing.
