Chopped lettuce, sliced tomatoes, deli ham, deli turkey, american cheese, shredded cheddar, milk, potato salad in cold holding unit at grill with an internal temperature of 52-54*F. Person in charge voluntarily on own accord discarded. All cold temperature-controlled foods should be held at 41*F or below. Person in charge voluntarily discarded. Recommend checking temperature logs before utilizing refrigeration units, keeping foods on ice during prep, and placing foods in refrigerators in between tasks. PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Observed several items (potatoes, sweet potatoes, gravy, brisket, pulled pork, risotto, marinara) stored in walk-in refrigerator 7 days past preparation date. Brisket with date prepared documented under discard date and ziplock bag of chili in freezer without dates. Person in charge stated foods were frozen within 24 hours, voluntarily discarded foods and placed correct stickers on brisket and frozen items. TCS food to be clearly marked to indicate the date or day the food shall be consumed on premises, sold, or discarded. Discussed proper date marking procedures.
