PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Observed three compartment sink in the back of Arena Café kitchen with a sanitizer concentration testing at 0ppm. Establishment uses lactic acid as sanitizing solution. During inspection, PIC was able to find three compartment sink with functional sanitizing equipment down the hall between sections 106-101. Until the sanitizing unit can be repaired, the employees will take the utensils to the other sink and wash, rinse and sanitize them at the functional sink in the mean time.
