Observed peelers with dried food debris stored in a cup on shelf near drive through window. Person in charge (PIC) stated the peelers are used for vegetables and were not used today. Observed knives stored hanging on magnetic rack with dried food debris. Observed spatula stored between two pieces of equipment, explained to PIC how utensils get contaminated. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Observed cooked rice in deep container covered with plastic wrap on counter. Person in charge (PIC) stated that rice was cooked less than 30 minutes prior and set on counter to cool. Discussed with PIC that cooling foods should be in shallow containers less than 4 inches deep, and uncovered, to maximize cold air flow. PIC moved rice to shallow metal container and left uncovered in the walk-in cooler. Correct By: Corrected At Time Of Inspection
