Inspector's notes

-- In reach-in refrigerator, observed containers of milk, deli turkey, and deli ham with internal temperatures measuring at 51°F using probing thermometer. The ambient temperature of reach-in refrigerator measured at 49.8°F using min/max thermometer. The person in charge stated the items were placed in the refrigerator approximately 1.5 hours prior to the inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

-- The ambient temperature of reach-in refrigerator holding multiple TCS foods measured at 49.8°F using min/max thermometer. See violation above. The refrigerator was observed to be overpacked. All TCS items have been removed from refrigerator. Discussed with the PIC removing all food items from directly in front of and beneath the air vents to help with air circulation. The establishment has sufficient refrigeration space to safely remain open using alternate refrigeration. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below prior to reusing the equipment. Corrective Action: Corrected at time of inspection.
