Establishment uses Time as a Public Health Control for their cut tomatoes, cut lettuce and American cheese that are placed on the burger dressing station and having an internal temperature of 68*F. Observed these food items still being utilized around 10 minutes after the 4 hour discard time. Person in charge voluntarily disposed of these food items at the time of inspection. Discussed the importance of ensuring food items that are under Time as a Public Health Control are properly time stamped and disposed within the 4 hours to ensure food safety. Corrective Action: Corrected at time of inspection.
