Corrective Action: Corrected at time of inspection. Cooked chicken under temperature control in a pan over ice on the counter at 51*F internally. Cut cabbage in a plastic pan on top of pans in the top of the cold table at 63*F internally. Chicken had been out less than two hours and was moved to walk-in to re-cool, cabbage was out more than two hours and was embargoed, manager discarded. Reviewed time /temperature requirements with the manager. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
