For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Unbaked pizzas in reach-in cooler nearest make-table found with internal temperatures of 46-49*F. The pizzas had sauce, cheese, and some had pepperoni. The ambient temperature was found to be holding at 46*F (verified with inspector's min/max thermometer). PIC stated the pizzas were prepared and placed in the cooler within the last hour and moved them to walk-in for cooling and continued cold holding. The reach-in cooler will not be used for cold holding TCS food items until it is repaired/replaced and able to maintain an ambient of 41*F or below. Alternate nearby coolers are available to continue normal operations. Please ensure cold held TCS food items are maintained at 41*F or below. Correct By: Corrected At Time Of Inspection

Establishment was open upon inspector's arrival. However, after signature log was signed and about 1 minute into the inspection, PIC informed the inspector that the establishment was voluntarily closing due to a plumbing issue. No food orders were being taken after this point. PIC will contact inspector by phone to inform when the issue is fixed and the establishment is open for business again.
