Inspector's notes

No detectable chlorine sanitizer in the final rinse of the in-use mechanical dishwasher. Chlorine sanitizer was also not observed in the final rinse of the mechanical dishwasher in the bar; however, it was not observed in use at the time. PIC immediately called repair service and a service technician arrived at time of inspection. Staff discontinued use of the dishwashers until they were repaired. Corrective Action: Corrected at time of inspection.

On flat top, observed green tomatillo sauce/108-125F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. The sauce was in a water bath that had gone dry. The sauce was determined to be within safe time holding parameters and was reheated to 165°F, and the water bath was corrected. Corrective Action: Corrected at time of inspection.

Observed asparagus in the cookline prep table at 58°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC did not know how long the asparagus had been in the prep table, so PIC disposed of it at the time of inspection. Corrective Action: Corrected at time of inspection.
