All ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. Follow label instructions. Corrective Action: Correct prior to next routine inspection.

Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, items had been placed in prep table at 330pm. PIC moved items to main fridge to cool. Corrective Action: Corrected at time of inspection.

Observed two tins of Tuna, Lettuce, and tomatoes at a temperature of 46-48*F in prep top furthest to the back of the kitchen. Observed pork, ham, roasted tomatoes and roast beef at a temperature of 49-52*F in prep top nearest to panini press. Person in charge explained that Items were in prep top for under 4 hours. Person in charge chose to discard items at time of inspection. Person in charge informed temperature sensitive items must remain at or below 41*F at all times.
